- Noodles with clams tonight. Saute chopped garlic in olive oil. Add flour & stir to make roux. Add canned minced clams (2 * 6.5 oz.).
- Stir until clams heated through & sauce is smooth. Serve over pasta. (Pepper and parsley are optional additions.)

Pumpkin butter
Today's recipes:
- Made pumpkin butter this morning: 1 c each butter & pumpkin puree, 1/4 c brown sugar, tsp cinnamon, 1/2 tsp nutmeg & allspice, pinch cloves.

stroganoff
Today's recipes:
- I've realized that I have yet to mention my yummy stroganoff! (Dinner tonight & last night)
- Saute 1 chopped onion in 4 Tbsp butter. Add 1 lb beef; brown. Stir in 1.5 Tbsp flour, ground pepper. Add 1 lb sliced mushrooms, cover 5 min.
- Stir in 1 can condensed cream of chicken soup (I use Campbell's Healthy Request) & cook 10 minutes. Add 1 cup sour cream & heat through.
- Serve over pasta or rice. Leftovers are very good.
- Notes: Use more or less flour depending on how thick you want it. Reduced fat sour cream tends to produce more liquidy end result.
- We've used both stew meat and ground beef. Try ground turkey or TVP (or chicken--not fish, though)

jambalaya risotto
Today's recipes:
- 'jambalaya risotto' tonight for dinner
- saute pepper flakes, saffron, celery, carrots, onion, red bell pepper, and garlic. Add 1 c rice, stir until opaque. Add broth 1 c @ a time
- Simmer until liquid evaporates, add more. Add sliced sausage (I used chicken/red pepper) and peeled raw shrimp. Cook till rice moist & done.
- I added 1 Tbsp butter to the risotto at the last minute for more flavor.
