stroganoff

Today's recipes:
  • I've realized that I have yet to mention my yummy stroganoff! (Dinner tonight & last night)
  • Saute 1 chopped onion in 4 Tbsp butter. Add 1 lb beef; brown. Stir in 1.5 Tbsp flour, ground pepper. Add 1 lb sliced mushrooms, cover 5 min.
  • Stir in 1 can condensed cream of chicken soup (I use Campbell's Healthy Request) & cook 10 minutes. Add 1 cup sour cream & heat through.
  • Serve over pasta or rice. Leftovers are very good.
  • Notes: Use more or less flour depending on how thick you want it. Reduced fat sour cream tends to produce more liquidy end result.
  • We've used both stew meat and ground beef. Try ground turkey or TVP (or chicken--not fish, though)
